In reply to Bernadette Austin. You could try a chia egg instead, replacing ground flax seeds with ground chia seeds at the same ratio. The texture might be slightly different though.

One of my favorite recipes! I’ve played with it a lot, added lemon to the batter, switched it up and done orange cranberry for Christmas…it’s a really versatile recipe!

Amazing! We waited for the blueberry extract to arrive, completely forgot to get the fresh blueberries but couldn’t wait any longer to try out the recipe and overall these were simply divine! I couldn’t have asked for a better muffin and even a day after, the muffins were still moist with the crunchy sugary top- yum!

I was wondering if you could use this recipe and use strawberries? I didnt know about moisture content. I have made them several times with blueberries and love love love them!
